A boisterous young dram that is green, sweet, drying and lightly peated throughout. It clearly needs time and although I haven’t tried it yet with water I expect that it will really benefit. Nose Without water: Youthful, green and drying with wet, old cut grass and hot wood which is loud but not spicy. It comes across as sun dried cedar staves/bark mostly with the spice bordering on aniseed (if I was pushed to call it). The bitter sweetness of key lime pie and baking apples follows and then malty notes or brown pasta, pasta water and a little vegetable oil. The peat is small, mineral and interwoven throughout. Taste Without water: Immediately there’s citrus (lemon) bitterness on the tip of the tongue with green wood and a peat which is much more pronounced than on the nose. It’s mineral, coal-like and intermingled with a fruit salad punch of sweetness. Once the sherry and smoke stops tussling it’s almost cake-like, finding itself somewhere between Victoria sponge and sticky toffee pudding. Finish Without water: The finish is muted and has soft highland peat, a little spice and green fruits.
