This single cask Chichibu was distilled in June 2011 and matured in a Manunara hogshead.

Chichibu distillery in Saitama, Japan was opened in 2008, and was the country’s first new distillery since Suntory opened Hakushu back in 1973. Chichibu was the brainchild of Ichiro Akuto, grandson of the founder of the legendary Hanyu distillery. The Ichiro’s Malt brand appeared in 2005 and rose to fame through the bottling of the last casks from Hanyu, particularly the sought after ‘Card’ series. The first Chichibu releases appeared under it in 2011.

Nose Yellow flowers, pistachio, rich and creamy vanilla. Juicy cantaloupe, which is quickly trailed by fluffy coconut cake and freshly brewed coffee. A touch of Sunkist oranges pulp, brown sugar and red date pudding. Water chestnuts, sandalwood with tiny bit of mint. Let it breathe for 15min, here goes the smell of cosmetics blended with some dried mandarin orange peel, white pepper, fresh plums and ripe English pears. Taste A splash of light pepper and citrus zest. White tea, orange plus apple juice floods in. Dried flowers, antique furniture and old magazines with a bit inky smell. At the same time it's nutty, sweet and sour in a fruity way. Plum peel and pomelo pith arrive later. It also tastes like olive oil, with some dried maple and caramel added. Finish Maple syrup, translucent plastic, cherry peel. Pistachio shell, crispy seaweed. The woody notes then become thicker with cinnamon and tiny bit of Sichuan peppercorns. What floats up later is yellow pear with peel and sour core, and pomelo leaves to end.
